Recipe Ideas

A lot of these recipes I've taken from various sites on the 'web. I don't rely on using recipes usually, but it's good to know roughly how much of each ingredient I should be eyeballing.

So, this page is mostly a reference for myself. I'll try to include the inspiration links if applicable.

Some of these recipes (such as the banana bread) can be baked into fun shapes using Novelty Cake Pans! Check out my collection!

Banana Bread

Inspired by: HuffPo's "Best Banana Bread"

Makes one big loaf, a dozen muffins, or a bundt pan or two. If making muffins, you might need to add a shot of non-dairy milk to make the mixture more scoop-able, depending on how ripe your bananas are. Again, this is all eyeball measuring!

  • 2 cups AP flour
  • 1/3 cup sugar
  • Baking powder and baking soda
  • Salt, cinnamon, whatever other spices
  • 2-5 ripe bananas. Do not over-mash!
  • Some acid to react with the baking soda. Lemon or Apple Cider Vinegar.
  • 1/2 cup of oil
  • Chocolate chips, walnuts, whatever other add-ins. Even try adding different fruit! Ex: cut back on the bananas and make apple bread
  • Turbinado sugar on top
  • Chickpea Fesenjan

    Persian Pomegranate-Walnut Stew. I think I saw this in some cookbook many years ago.

    Serve over rice with plenty of pomegranate arils.

  • 1 can of chickpeas, rinsed
  • 1 onion (powdered, if your partner doesn't like onions)
  • 8 oz. bottle of pomegranate juice with a teaspoon of Better than Bouillon paste (why simmer the juice down just to add water to make stock?)
  • Squirt of agave nectar or spoonful of sugar
  • Spices: cinnamon, black pepper, turmeric
  • A cup or two of walnuts, toasted in the oven and then blended into a meal
  • Drizzle of olive oil
  • "Everything" Cobbler

    Inspired by: Viet Vegan's Blueberry Cobbler

    Just about any fruit will do for this cobbler... Apples, mixed berries, etc. Dessert for two, served in mini cocettes.

    For the filling:

  • Measure out your fruit to fill the baking dish(es). They will shrink so fill it up.
  • Lemon juice
  • Sprinkling of sugar. Spices if desired (apple pie anyone?)
  • Cornstarch. The more cornstarch you add, the thicker.
  • For the cobbler topping:

  • 1/4 cup (vegan) butter
  • 2 Tbsp sugar
  • 1 cup flour
  • Baking soda + baking powder
  • 1/3 cup milk of choice
  • Tablespoon of acid: lemon juice or Apple Cider Vinegar
  • Turbinado sugar on top
  • Sweet Rolls

    Inspired by many cinnamon roll recipes

    You can use this dough and smear cinnamon+butter+sugar to make cinnamon rolls, but why stop there? Pumpkin rolls, cardamom rolls, whatever filling you want! This makes very soft dough, but sub out 1/2 cup of AP flour for bread flour and then you'll be in babka territory.

    For the dough:

  • Buttermilk (~3Tbsp vegan butter melted into 1 Cup milk of choice)
  • Packet o' yeast
  • Squirt of agave/spoon of sugar (jumpstarts the yeast)
  • Pinch of salt
  • 3 Cups AP flour
  • Filling ideas:

  • Cinnamon rolls: butter, sugar, cinnamon
  • Pumpkin rolls: pumpkin puree, pumpkin spices, butter, sugar
  • Cardamom rolls: cardamom, butter, sugar
  • Chocolate rolls: melted chocolate chips, butter, sugar (should be spreadable)
  • Top with vegan cream cheese frosting (cream cheese + powdered sugar + vanilla extract, or whatever spices make sense)

    Air Fryer Biscuits

    Good for breakfast sandwiches!

    Combine the wet and dry ingredients, cut into small circles with a glass, and put into a greased air fryer at 400F for 7-10 minutes.

    Dry Ingredients:

  • 1 Cup AP flour
  • 1/2 Tbsp baking powder, 1/4 tsp baking soda
  • Dash o' salt
  • 2 Tbsp non-dairy butter/coconut oil, cut into the flour so it resembles kinetic sand
  • Wet Ingredients:
    N.B. You will NOT use all of the milk!! Add this slowly to the dry ingredients just until you have a shaggy dough

  • 1/2 cup milk of choice
  • Scant Tbsp acid (apple cider vinegar/lemon juice)
